I’ve been using Movavi.  It has a Mac version.  It was fairly easy to combine separate PDFs into 1.  The only catch I haven’t figured out yet, is when I drag multiple files to the new PDF, it doesn’t sort by date.  So I’ve rearranged. https://pdf.movavi.com/pdf-editor-mac/
