My experience with wedding photography is the B&W were not originals, just edited as a convenience.  My thoughts on design is it is very personal.  In the two wedding albums I’ve done I added a spread with two B&W and I’ve also designed a few spreads where I combined 2 B&Ws with about 8 colors.  It would be a 2/10 ratio.  Again it was just my style and the client liked it.  My criteria for choosing a few B&Ws is that there are features in the photo that show better when the eye is not distracted by color or it feels like a timeless pose.
